Seasonal Treat

Honey Sugared Walnuts:

2 1/2 cups walnut halfs
1 1/2 cups granulated sugar
1/2 cup of water
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon vanilla

Toast walnutsin 375 degree oven for 10 minutes, stirring once. ( these can go to burnt very fast, remove from baking sheet or will continue cooking)
Butter sides of 2 quart heavy sauce pan . In it combine sugar, water, honey, salt and cinnamon.

Heat and stir till sugar desolves and mixtures coms to boiling. Cook to soft ball stage on candy thermoneter with out stirring.
Add vanilla and warm nuts , gently stir until nuts are well coated and mixture is thickened,

Turn out on buttered baking sheet. separate nuts at once.

Notes. If one granual of sugar is not cooked the resulting mixture will have sugar granuals, to prevent, at mid stage wash down with pastry brush the sides of the pot once with warm water.

If you do not have a candy thermoneter . after cooking for a time . drop teaspoon into cold water in cup. a soft ball should form. . It takes the mixture some time to reach soft ball stage , but very little time once it dose to reach hard ball stage. If it is runny and desolves righ away its not at soft ball stage.
