Chewy Peanut Butter Cookies

Ingredients

* 1 cup packed light brown sugar
* 1 cup white sugar
* 1 3/4 cup peanut butter
* 1 teaspoon Vanilla - I used real vanilla extract
* 1 cup shortening - I used butter flavored Crisco
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 2 tablespoons hot water
* 2 1/2 cups all-purpose flour
* 3 eggs

Directions

1. Mix sugars, peanut butter, vanilla, and shortening. Add baking soda to the hot water. Add to mixture. Stir well.

2. Stir in the eggs. Add the flour and salt. Roll dough into 1 inch balls.

3. Place balls on ungreased cookie sheet. Press with fork dipped in water to make criss-cross design.
Bake at 350 - 375 degrees F (175 - 190 degrees C) for about 8-10 minutes.

Note: Cool for at least 3 minutes on the cookie sheet before removing or they will fall apart. 8 - 10 minutes should be a perfect cooking time. The cookies will look like they are just starting to brown on the very edges and may not even look done to you, but they are. Just let them cool and they will be soft. The longer you cook the cookies the more firm they become.
