Easy and quick recipe for camping and get togethers

Chicken Potato Bake (Or Hamburger)

1 12 oz pke. frozen hash browns:
1/2 teaspoon of salt
1 tablespoon magarmine or vegeatable oil

1 cup chopped celery
1/2 cup chopped carrots (not thick)
1/2 cup chopped onions
2 tablespoons margarine

1- 8 oz pkg cream cheese
1/4 cup of milk ( I use cream)
2 cups cooked chopped chicken ( or cooked hamburger broken up)
1 teaspoon lemon juice
1/4 teaspoon of poultry season for chicken.
shake of pepper to your taste

Combine potatoes and salt mix lightly. Press into bottom of 10x6 baking dish after greasing . Bake at 425 degrees for 30 minutes. Yes I mean 425, makes nice crisp base.

Saute vegetables in margarine. Add cream cheese and milk, stir over low heat until cream chesse is melted.

Add remaining ingregredients; mix well. Spoon misture over potatoes . Bake at 350 degrees for 30 minutes. :D

Here's another really good grilling recipe. My mom got this marinade recipe from a Korean friend of hers, who claimed it was given to her by her dead Grandmother who lived in Seoul. If I can't find any good short ribs, I marinade chicken or boneless pork chops in it. I also throw a teaspoon or two of kojijun (Korean red pepper paste) in it for a little bit more kick..


Kal-Bi Marinade

4 lb short ribs
1/4 cup soy sauce
1 tablespoon sugar
1/8 tablespoon pepper
1 tablespoon minced garlic
1 tablespoon honey
1/2 teaspoon minced ginger root
1/4 cup minced green onions
1 teaspoon sesame oil

Marinade meat for at least 4 hours, overnight is optimal. Grilling over charcoal really enhances the flavor, but on a gas grill is good also..:)
