Cindyloos Potato Soup

Cindyloos Potato Soup

2 lbs potatoes
8 cups of chicken broth ( or broth and water)

1/2 cup heavy cream
4 Tbs butter
2 cups of chopped onions
3 cups of carrots (Julienned, =(cut into thin strips 2 or 3 inchs long)
1/2 cup of sugar
6 cups julienned cabbage ( thin strips again)
Salt and fresh ground pepper

Peel potatoes, cut into chunks, Cook in large pot until tender in the chicken broth.

Remove the potatoes , reserve the broth, and mash with the cream.

Meanwhile, melt the butter in large saucepan and cook the onions until wilted and golden on medium heat. Stir in the carroots and saute until almost tender, then sprinkle with the sugar.

Add the cabbage and cook untill wilted. Whisk the mashed potatoes into the broth , add the sauteed vegetables , heat together for 5 min or so. Season to taste with salt and fresh ground pepper.

If adding cheese or bacon I would not include in the soup, rathere use light sprinke of each on top so not to end up with bacon cheese soup.

i need a good potato soup without cabbage. that stuff freaks me out. and does worse for the innerds

Potato soup for BD

Cut up potato's and put in water (peeling optional)
Boil till soft
Add salt and pepper

Eat with lots of beer available

Dun!

BD,

A potato fix? Surely you've been there but if not... take a trip down to the Bull & Bush. Green chili served over mash potatoes - with a side of fries. You could starch your own shirts for a week. Worked just down the street from there for 5 years, and lived just down the way for a year or two.

Did I mention it's a brewery too?

In Denver (Glendale technically).

I'd do 6th east to 25 south.
North on Colorado to Cherry Creek South Drive. Was a Four Points Sheraton on the corner last I recall. If you pass Shotgun Willies you missed the turn, but that place will put starch in your shorts too.
Right on Cherry Creek South Drive.

Believe you'll go through one set of lights at Cherry, and it'll come up fast on the right, right after Dexter. It looks out of place - an old style pub in front of a ton of condos that have grown up around it.

One you are such a sweety pie :) I actually made some soup the day we talked, it was very similar to yours but I didn't even think to add cabbage. I love that idea, gonna try it. I ended up adding a few chipotle and jalepenos, it definately warmed you up hehe. Thank you so much!

Creamy Garlic Potato Soup

Ingredients -
4 (12 ounces) 99% Fat-Free Chicken Broth
2 (12 ounces) Evaporated Skim Milk
5 pounds Russet Potatoes, peeled and cubed
5 1/2 cups chopped Yellow or White Onion
8 slices cooked, crumbled Bacon
1 slice Ham Steak, chopped into 1/2" pieces
2 teaspoons diced Garlic
3 Bay Leaves
1 teaspoon Celery Seed
1 pint Whipping Cream
1/3 cup chopped Fresh Parsley

For garnish:
shredded Sharp Cheddar Cheese
chopped Green Onion


Preparation:
Saute the onions and garlic in butter or margarine over medium heat until translucent. Scrape them into the soup kettle, and turn on the heat to medium. Pour in the chicken broth and evaporated milk. Put in the potato pieces, bacon, ham pieces, bay leaves, celery seed and whipping cream. Bring to boil, and simmer until the potato is tender. Mash a dozen or so potato chunks against the side of the kettle and stir the pot to thicken the soup (you can mash more to make it thicker). Throw in the parlsey and stir, and return pot to simmer. Cut up some good rich bread, ladle the soup into your bowl. Sprinkle cheese and green onion on top to taste.

sounds good.

But if you can find it / grow it add garlic leaks for some extra flavor.
I use them in shepards pie and their great
