Soft Oatmeal Cookies

Soft Oatmeal Cookies

Prep Time: 15 Minutes
Cook Time: 10 Minutes
Ready In: 2 Hours
Servings: 24

INGREDIENTS:

1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract - I use pure vanilla
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 teaspoons ground cinnamon
3 cups quick cooking oats

DIRECTIONS:

1. In a medium bowl, cream together butter, white sugar, and brown sugar. Beat in eggs one at a time, then stir in vanilla. Combine flour, baking soda, salt, and cinnamon; stir into the creamed mixture. Mix in oats. Cover, and chill dough for at least one hour (very important).

2. Preheat the oven to 375 degrees F (190 degrees C). Roll the dough into walnut sized balls, and place 2 inches apart on cookie sheets. Some prefer to grease the cookie sheets, with this recipe I didn't feel the need to, and they turned out fine and didn't stick at all.

3. Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Some Suggestions:

Divide the batter into 3 bowls and Mix in each bowl a combination of any (3 Max) of the following ingredients to your liking and then chill the dough. (example: walnuts, chocolate chips and coconut) anymore than 3 and the cookies will crumble and fall apart.

1/2 cup Chopped Walnuts
1/2 cup Pecans
1/2 cup Macadamia Nuts
1/3 cup Raisins
1/3 cup Semi-sweet Chocolate Chips
1/3 cup White Chocolate Chips
1/4 cup Dried Cranberries
1/4 cup Craisins
1/4 cup Shredded Coconut

* You can also choose to reduce the Cinnamon to 1 tsp and add 1/2 tsp ground cloves

Be careful if you use Margarine because cooking times vary with Margarine versus butter, they normally require longer cooking times. I personally use butter or Butter flavored Crisco when baking any of my cookies then I do not have to play the guessing game of if they are done or not.


The batch I just made is with 3/4 cup Coconut and 1/2 cup almonds for the full batch, I didn't divide it up.
