Guildie RL Recipes

Post by Zelima »

Just thought it would be nice to get a RL recipe thread going. Onefop always posts awesome stuff (I have tried his Lemon Squares/Bars Recipe and it was to die for).

The weather will be turning warmer here hopefully soon and I'd love some new grilling recipes..

Chicken Sukiyaki

Sukiyaki is a common Japanese soup-type dish that is super easy to make (I make an Americanized version of it because I'm not a big tofu freak and don't do the whole egg thing).

Ingredients:

3 boneless chicken breasts cubed
4 carrots, peeled and sliced diagonally
4 celery stalks, sliced diagonally
1 sweet white onion sliced
2 small cans of button mushrooms or 1 oz. container or freshed mushroom sliced
6 cups of water
2 cups of slightly cooked japanese rice noodles
2 cups of mung bean sprouts, fresh
dash of sesame oil
half a bottle of Kikkoman stirfry sauce
pepper and soy sauce to taste
chopped green onions for garnish

Cook cubed chicken over medium heat in large pot in sesame oil. Add chopped carrots, celery, and onions, cook halfway and add 6 cups of water. Add a couple shakes of black pepper, about 3 to 4 T of the stirfry sauce and maybe 2 T of soy sauce and simmer for about 10 minutes or until veges are cooked. While soup is simmering, cook 2 bundles or the equivalent of 2 cups of japanese rice noodles (they are clear) in boiling water for approximately 2 minutes and drain. Leave on the side. Then add mushrooms and mung bean sprouts and a bit more stir fry sauce, soy sauce and pepper. Cook until bean sprouts are soft. Add rice noodles last. Broth should be the color of a beef broth. Serve hot over cooked white rice or without. Garnish with chopped green onions.

You can substitute thinly sliced beef or pork or shrimp for the chicken. I prefer the chicken version myself tho.

Beer can chicken

buy a frier (4-6 lb whole chicken)
get a 6 pack of beer (cheap shit beer, the kind americans like)

rummage through your spice rack and pull out:

1 teaspoon paprika
1 teaspoon kosher salt
1/2 teaspoon ground sage
1/2 teaspoon ground cumin
1/2 teaspoon freshly ground black pepper
mash up one garlic clove
mix in a small bowl with about 2 tbs olive oil (kalamata is best)

cut one med onion in 1/2

ok now drink 1/2 of one beer, wash and dry the bird (bring em up to room temp too). Rub bird down with the spice mixture, cram the onion into the void near the neck, cram the beer can into the ass end, and stand the chicken up on its legs and beer can and cook over medium INdirect heat for 1 hour 15 min or so.

can drink the other beers while waiting,
remove from heat and let it stand for 5 min or so, then carve and serve.
